Just launched by a food blogger whose acclaimed bi-monthly pizza parties led to his building a backyard wood-fired oven, Bola's a trailer-fied kiln that'll travel to private parties, then use local/organic ingredients (Antonelli's cheese, meats from Kocurek Family Charcuterie and Salt & Time) in cooked-to-order numbers like the Polka Dot (parm, mozz, cherry tomato, fried sage, shaved garlic, red pepper flakes) and the Godfather, with smoked scamorza, hot fennel sausage, caramelized onion, and "a little bit of anger" -- probably over the Godfather 3 turning out to just be cheese.
