While casinos are the lifeblood of Sin City's economy, getting the Vegas experience sans the clubs and poolside entertainment would be like getting Siegfried without Roy, or Roy without his face. Giving you the Vegas, without leaving the green line, Splash, opening Thursday.

The second summer offering from the owner of Bricco and Umbria Prime, Splash is billed as a Sin City-inspired ultra lounge/burger bar offering gourmet burgers, tapas, and specialty cocktails in a 250-capacity sleek, grey carpeted multi-roomed space with a water wall near the door, an elegant billiards room, private VIP lounge, and an exotic Mandalay Bay-like pool, fountain, and cabana-dotted roof deck replete w/ beaming lights that're just happy because, when they're on, they're on! Succulent meaty burgers include the 21-day dry aged and corn fed Black Angus; a Barolo wine-braised boneless short rib patty; and a juicy slab of lean bison that looks great, sure, but no one wants to hear it blab on about Oregon Trail Hunting Mode Boot Camp. Splash also serves Mediterranean-inspired small plates like grass-fed lamb lollipops, bay oysters w/ a sweet lemoncello sorbet, and ahi tuna tartar on farro crackers, not to mention mom's homemade meatballs, which seem funny, but, um, maybe you should make the joke.

If hot models and/or brunch is your 'thang, be sure to check out Wednesday night's weekly designer fashion shows or Sunday "Rehab," a laid-back rooftop buffet and cocktail brunch set poolside in your own private cabana -- because you can't get the full Vegas experience without a private cabana, and you can't get a private cabana if Roy's just going to freak everybody out.
