To accommodate Greenville's Greenville-ness, Kirby's has taken a half-step away from its steakhouse past and re-branded itself with an all-new menu that emphasizes hickory-licked items such as cold-smoked ribeye, Shiner-brined Berkshire pork chop, rainbow trout, and Hawaiian spearfish, plus pizzas like the “Italian Stallion” (pepperoni/sausage/bacon/prosciutto/provolone) and the triple-truffled "Truffle Aux Trois" -- which sounds like a great idea, but will likely leave someone crying in their car.
