Helmed by a Louisiana native who used to work at Moonshine, BC is a pink E 6th St trailer dishing on-a-stick Cajun staples like gumbo and etouffee, as well as sticked versions of Zapp's potato chip-crusted fried chicken, jambalaya, and what Franklin let out when he discovered electricity (a beignet).
