Opened just last week in Union Square by a James Beard award-winner, BS's already got some non-menu'd goodness in the form of a Spinach Souffle, which's made with blanched Popeye fuel and pate-a-shoux dough, whipped egg whites and lemon zest all baked into a Parmesan-filled popover-style puff -- a good choice, as magic-dragon-style puffs come pre-baked.
