NYC pizza transplant now in Echo Park

Despite their impudent claims of hating it, New Yorkers have a long history of making LA home: witness Brooklyn-born Joe Torre, longtime NY resident Tommy Lasorda, or countless other transplants who never managed the Dodgers. For another NYer whose relocation's absolutely welcome, check Two Boots.A Manhattan pizza institution for 20+ years, Boots is finally opening in Echo Park, serving stretched (rather than rolled) pies that add a unique Louisiana steez via thin cornmeal crust, spicy tomato sauce, and toppings both Cajun (Creole chicken, crawfish) and typical. The cozy, patioed Sunset space features a happily bizarre mural of spaceships, baseballs, jellyfish, and the Yellow Submarine; 'za's available by slice or pie, w/ specialty choices named after cinematic characters, like The Newman (white pie, sopressata, sweet Italian sausage), Mr. Pink (marinated chicken, plum tomatoes, fresh garlic), and an affair w/ tasso, ground beef, cheddar, and mozz named The Dude (order it up, and mark it ate). To keep flavors consistent with its East Coast counterparts, all the olive oil & mozz're sourced from the same purveyors as the NY spots, though the water for crusts is still from LA; test batches have been "almost perfect", finally proving that water is...water.Soon, Boots'll offer delivery to addresses within a few-sq-mile radius -- at which point, they'll truly be adapted to LA, since their home's on the Eastside, and they'll fiercely refuse to ever go west of Vermont.
