Because Mother's Day is about feeding Mom something other than endless lies about your life, Tavernita top toque Ryan Poli generously stepped up with an easy-even-for-you brunch recipe sporting more Spanish flair than Madrid's TGI Friday's. Watch him make it in the video above, then follow these four simple steps:

Potatoes: Give 'em a quick dice, boil 'til tender, cool them off in the fridge, then fry them twice. Resist urge to eat twice-fried potatoes.

Chorizo: Bring some sausage to the party by dicing and frying the chorizo before mixing it up with the potatoes that you definitely didn't eat.

Eggs: The perfect egg should be cooked just long enough so that the yolk stays runny but the edges are brown and crispy, a high wire act requiring you have some serious huevos yourself.

Assembly: Plate the potato/chorizo combo in a large bowl, slide the eggs on top, then bring to the table before breaking the yolks and whites, because Mother's Day is about breaking something other than your mom's heart with terrible, terrible truths.
