Gordo's take on the traditional steakhouse starts with beef aged for 28 days in a Himalayan salt room, all paraded around the room on a rolling meat cart so guests can ogle everything from 2lb porterhouses, to various 8oz American Kobe cuts (skirt, rib cap, filet) w/ a minimum "marbling score" of 9, which sounds like true marble madness.
The grill will also fire up loup de mer, and lamb chops "with the flavor of shepherd's pie" (lamb meatballs, peas, carrots, potato puree), while composed plates evince the chef's deft touch, from rabbit cavatelli w/ Mornay sauce, to smoked beef tartare w/ Guinness-infused mustard seeds, explaining how they get so cracked.
And to slake your thirst, just pick up one of the provided iPads and order a signature 'tail like the Drifter (Knob Creek, ginger liqueur, Velvet Falernum, lemon), or the Hendrick's/basil-infused rock candy/celery bitters/cucumber English Garden, which may not be Eden, but will certainly make you give in to temptations.
