This Thrillist-only, fragrant, dry curry sees a tender game bird covered in a combo of galangal, lemongrass, krachai & lime leaves, then topped with stunningly hot Bhut Jolokia "ghost" chilli, which at 400 times the heat of Tabasco has literally been weaponized in non-lethal hand grenades -- good thing this dish is so delicious, you'll throw yourself on it anyways.
