Stop chasing down semi drivers for their half-finished bags of Cheetos (crunchy), and catch SFT Bistro: debuting Friday at the The Miami Lakes Street Food Fiesta, it’s the latest, upscale-er mobile offspring of the two chefs (Gotham Steak, Canyon Ranch Miami Beach) behind The 305's Food Network-acclaimed Slow Food Truck, who're dedicated to delivering a more high-end dining experience from this one, despite it being painted bold yellow and with the words "So Freakin Tasty".
While keeping some signatures like the Shorty (braised short rib sandwich on Cuban bread w/ grilled queso), Bistro's upping the gourmet-ness by plating locally sourced seafood they'll literally pick up straight off the docks and cook that day to create stuff like scallion-/brown butter-soaked Florida lobster piled on a potato bun, and a buttload of grilled scallops all sauced up in le blanc, which will last about as long on your plate as Joey did on NBC.
They'll also be dishing a bison burger loaded with avocado and white balsamic dressing, and'll be rotating in a lemon-infused "Grilled Catch of the Day" that'll come blackened with either remoulade or meuniere sauce, which Biff Tannen hates, because he's terrible at pronouncing things.
Sides would make the 19thC Irish wildly jealous, as they're whipping up everything from truffle-Parmesan to roasted seasonal potatoes, while for drinks it’s sugarcane-only sodas and plenty of Arnold Palmers, who's pretty easy to catch, because golf carts top out at like 15mph.
