Now open on the second floor of the Wintergarden atrium at Bellevue's Hyatt Regency, this AM eats-only spot is doing NW takes on classics like eggs benedict (shaved prosciutto & citrus cream, Alaskan Dungeness crab, etc.), and new stuff including “425” Pork & Eggs, which has seven-hour-braised shoulder, cage free eggs, and, given the area code, probably lots and lots of cheddar.
