A few days shy of their first birthday, Copa's flown in a three-time four-star executive chef from Spain to flip the formerly-Asian menu into something more traditionally Espanan, small plate dishes like Pimientos de Padron (flash fried peppers), clams w/ slices of chorizo, cheese/artichoke/spinach filled empanadas, and a spinach salad w/ Serano ham, all such great choices you can't help but feel Dorn.
