Zama

After years of helming kitchens at Stephen Starr's Pod & Morimoto, sushi man Hiroyuki "Zama" Tanaka finally has a place of his own after transforming the former dark, clubby Loie space into a bright 80-seater w/ backlit maple slat-lined walls and a massive, fish-shaped rice paper lantern hanging above the front sushi bar. Japanese fare includes miso-marinated Black Cod Saikyo Yaki and breaded Berkshire Pork Chop Tonkatsu w/ Japanese slaw & miso katsu sauce; sushi rolls from tempura lobster w/ teriyaki truffle to BBQ eel; and 30+ a la carte sashimi options, while booze ranges from sake to Asian cocktails like the green tea liquor/vodka/Calpis Grasshopper-san, and the Nigori sake/raspberry puree/mango juice Sake Punch, which Grasshopper-san better be on the lookout for, because some people have no honor.
