Tortilleria El Characo is a hard-to-find, hole-in-the-wall taco shop and grocery store in Northwest Dallas. As the name suggests, there’s a tortilla factory connected to a small dining area, where corn tortillas are made to order as a base for guisado (stew). Skip the pre-packaged snacks hanging from wire fixtures, and opt for the signature costilla -- slow-cooked ribs that are cubed and swimming in a dark-chile sauce.
