NY's very first spot dedicated entirely to deep-fried 'za (aka... montanara) comes from the Master Neapolitan Pizzaiolo behind Forcella, whose quick-casual concept (half of the 25 seats are at the bar) is well-suited for ultra-crispy pies topped with Italian pepperoni, truffle oil & mushrooms, deep-fried meatballs, and a porchetta pizza sandwich w/ smoked mozzarella, as frying mozzarella would have just been crazy.
