The Southwestern institution's taking things up a notch with a spring menu including the Jumbo Crab Spinach Skillet with creamy spinach and red/green peppers covered in toasted bacon gratin, Sweet Scallops doused in basil pesto on roasted corn polenta, and, served over angel hair pasta, the roasted poblano/ onion/ corn/ Cotija cheese 1800 Silver Tequila Chicken, served with Sammy Hagar's favorite side, Cabo Wattle.
