If there's one way to ensure the goods you're peddling are up to snuff, it's to test them out on your friends -- unless you're actually selling snuff, in which case you should probably just stay in New Hampshire. For friend-tested grub, hit Fillbelly's (Kitchen Kingz) Food Truck, rolling out Friday night
From a former Mt. Ida student/culinary institute grad (and his biz partner buddy) who got started by selling box lunches to his semi-pro football teammates, FFT's a late-night food truck aiming to "fill yo' belly" into the wee hours of the morning with home-style soul food favorites -- so get ready for a heaping plate of Mekhi Phifer! Grub includes five large paprika/cilantro-seasoned baked chicken wings; cayenne pepper-spiced crispy fried chicken w/ fluffy coconut waffles; and their own twist on the empanada (filled with teriyaki beef, corn, and red beans) called the Bosilito, also what they called Brian Bosworth when he took that weird sabbatical in Cabo. There's also deliciousness like traditional Mac & Cheese w/ Parmesan, cheddar, and mozzeralla; sides/snacks including cookies, chips, and tossed salads; and a soup'd up Mac & Soul Casserole that includes the aforementioned three cheeses, as well as finely chopped collard greens and cinnamon sweet potatoes that're shredded (take note snowboarders, you too can be productive during the off-season).
While things are just getting rolling, FFT's working on new menu items for down the road like special cornbread, peanut butter waffles, and a fiddlehead empanada with a side of fresh pasta salad; they're also planning to let local artists repaint the truck monthly as a venue to showcase their work, which, if they happen to be from NH, might aptly be titled SnuffWhitePeopleLike.
