'Tails and t-bones in Aspen

Surely the name of a coming SyFy movie where post-apocalyptic desperados fight genetically modified avalanches, Justice Snow's --for now -- is a brand new apres/ dinner spot inside Aspen's Wheeler Opera House with hearty CO-sourced eats, a former Williams & Graham mixologist, and 100yr-old oak floors & doe-skin seatbacks highlighting a “Prohibition-style design".

Post-mogul soreness can be assuaged with a signature cocktail list (the drinks on it, that is -- rubbing their menu on your thighs has been found ineffective) highlighted by the egg white/ ROOT foam-topped Aspen Root with Rob's Mountain Gin/ Strega/ peach liqueur/ sage/ chocolate mole bitters, and the Breck Bourbon/ benedictine/ blackberry liqueur/ absinthe/ bitters/ sugar cube Last Run. For solids, there's CO black Angus flatiron with smoky blue cheese butter, or a local, roasted Red Bird chicken rubbed in green chile and served with white cheddar grits, and a 10oz lamb t-bone with sweet potato ricotta gnocchi, shallots, red wine herbed reduction, and rainbow chard -- have a friend order it as well to give your table an epic double rainbow chard.

And if you're just looking for a between-blue-squares snack, there's crispy pork belly sliders, tempura pickles, and jerk-spiced twice-cooked wings -- just don't fill up too much, lest your extra weight leave you more buried than 98% of the world's population in 2078.
