New American cuisine in Cherry Creek

Exiting the swanky Opus in Littleton, Chef Michael Long is setting up shop in a decidedly less fancy (nary a tablecloth in sight), hardwood-floored Cherry Creek space to serve "inspired New American" morsels like a goat cheese/ pistachio crusted Redbird chicken with shaved fennel, a Yukon potato cake & chicken jus, and a Dr. Pepper-braised bison short rib with buttermilk mashed potatoes, Brussels sprouts, and "parsnip Lincoln logs", which'll allow you to build everything from a parsnip log cabin, to...a slightly larger parsnip log cabin!
