Chi's newest barons of beef're serving prime steaks (cut and dry-aged on site) in a 225-seat, red velvet-boothed dining room flanked by towering shelves containing their collection of vino, all meticulously detailed on an iPad (laying out everything from tasting notes to aerial views of the various vineyards) and focused on plus-sized bottles, which typically come with fat glasses. So classy.
