Don Chile

From a chef born in Campeche, Mexico, Don Chile's keeps the décor less Mexi-Disney than most spots (no clay pots and sombreros, just a few pre-Colombian masks on the walls), and the menu traditional, with faves like fajitas, flautas, and carne asada, as well as stuff like Burrito de Costillas (boneless spare rib in BBQ chili sauce), Tacos Al Pastor (marinated pork tenderloin w/ pineapple & roasted onions), and broiled mahi marinated with "Achiote", a red seed from a Central American plant nicknamed the "lipstick tree", which means he gets away with everything.
