What do you get when you take a Moscow Mule, subtract the vodka and add Captain Morgan’s Original Spiced Rum? It’s called the Morgan Mule, and it’s a marvelous mashup: rum, ginger beer, and lime. It’s crisp, refreshing-tasting, and just a little bit off the beaten path. Or, rather, charted course, because pirates.

Rum and Grapefruit Soda, aka The Palomaloha

One of the most popular cocktails in Mexico is a combination of grapefruit soda, lime juice, and tequila. It’s called the Paloma, and it’s more beloved than the Margarita south of the border. If you swap out the tequila for rum, you have the Palomaloha, a sweet and spicy Captain Morgan signature. If the name doesn’t ring a bell with your server, just ask for a “rum, grapefruit soda, and lime.” It’s that easy.

Mai Tai

Don’t be fooled by the slightly exotic name: the Mai Tai is an easy, excellent cocktail that contains just four ingredients: lime, rum, orange liqueur, and orgeat. Orgeat is an almond syrup that’s pronounced ‘or-zha’ (silent ‘t’) and despite its fancy-sounding name, you should in no way be intimidated by it. Work the Mai Tai into your rotation at your local, or grab some orgeat—say it again, “or-zha”—and make this tropical treat at home. You win either way.

Don’t forget about the standby sometimes known by its fancier name, the Cuba Libre. Whatever you call it, it’s been one of the most popular drinks in the world since the 1930s, when it first appeared in a cocktail book, and the decade after that, when it was the subject of a pop song that spent 10 weeks at No. 1 on the charts. The Rum and Cola’s popularity is no mystery: its components are easy to find, they’re tasty, and they work well together. That said, the simple combo is possible to mess up, believe it or not: If you’re making it at home, be sure to keep the balance right. You don’t want the rum or the cola to hog the spotlight.
