Jurassic Park supplied us with many valuable lessons, like don't resurrect an extinct species unless you're absolutely certain it will get the job done and kill Jeff Goldblum. For a welcome resurrection that won't eat you while you're on the toilet, hit Grimm Brothers Brewhouse. Outfitted like a funky coffee shop, this Loveland taproom and brewhouse was opened by two eight-year homebrewing vets; their inaugural line of Germans includes three year-rounds and one seasonal, all inspired by the Brothers Grimm fairy tales (so after getting fat off their product, be very wary of ovens). Their signature label is Snow Drop, brewed in the Köttbusser style and made with oats, honey & molasses, notable because the Reinheitsgebot beer purity laws forbade anything other than water, hops, barley, and yeast, causing Köttbussers to disappear from 1500 'til the laws' repeal in 1988 -- presumably after an enormous lobbying effort by Zima. Other stein-fillers include the Little Red Cap, an altbier with a red tint, specialty hops, and a tiny bit of sweetness in the finish, and a dark, malty, "bready chocolate" Munich Dunkel called Fearless Youth, the perfect elixir for Anxiety-Ridden Middle Age. As for the seasonal, their most recently released is a maltier version of Little Red Cap they've christened Big Bad Wolf -- or, how people felt about Dick when he cast Goldblum on Criminal Intent.
