The name of this drink alone makes us feel like there’s a party—or maybe even a parade—goin’ on. Developed by Chris Churilla at the Bit House Saloon in Portland, Oregon, it deploys the underused duo of gin and ginger, with additional floral notes courtesy of a house-made lavender cordial. It’s easy to make, bright and refreshing, and perfect for welcoming in spring.
Here’s the complete recipe:
- 1 oz lavender cordial
- 1.25 oz gin
- .5 oz ginger syrup
- .75 oz fresh lemon juice
- Soda water, to top
- Tonic water, to top
- Add lavender cordial, gin, ginger syrup, and lemon juice to a shaker tin with ice.
- Shake to combine and chill, then strain over fresh ice in a Collins glass.
- Top with equal parts tonic and soda
