No one ever accused Phil Collins of being upscale, but this cheekily named spin on a Tom Collins is definitely elevated. It features cucumber vodka, yellow chartreuse, and cranberry bitters—and the finished product, like its inspiration, is refreshing and bright, but with an added herbaceous dimension. The drink was created by Jackson Cannon at The Hawthorne in Boston.
Here's how to make it:
- 1.5 oz cucumber vodka
- .75 oz fresh lime juice
- .5 oz yellow chartreuse
- 1 dash cranberry bitters
- Soda water, to top
- Add cucumber gin, lime juice, yellow chartreuse and bitters to a shaker tin with ice.
- Shake to combine and chill
- Strain over fresh ice in a Highball glass, and top with soda water.
