Mexican with a hint of Japan, now in food-truck form

A Japanese-influenced carnitas taco at Oyama

Named after a strangely Japanese-sounding town in the Tamaulipas region of Mexico, Oyama is a food truck parked along IH-35 at 30th St, where it's manned by two culinary school grads who're serving up Mex-anese (... Jap-ican?) combinations like carnitas with beer-dashi braised pork, sous-vide achiote chicken yakitori, and quesadillas with shiitake rajas and pulled brisket on blue corn tortillas.
