Most New Yorkers assume "Texas" and "cuisine" go together like "Flavor Flav" and "quiet dignity". Enter Lonesome Dove Western Bistro, officially opening Tuesday in the Flatiron.
LD serves gourmet cowboy dishes created by chef Tim Love, whose original restaurant in Ft. Worth has earned the praise of everyone from Good Morning America on up to BikerScum.com's Patrick St. Jean. This northern outpost is aiming for the original's ten-gallon casualness, but regardless of atmosphere the food here's the main event, with many items plucked straight from Love's epicureally chap-busting Ft. Worth menu.

With offerings like these, it's unlikely LD'll meet the fate of less worthy Lone Star standard-bearers (sorry, "Texas Texas"). So if you've got preconceptions, this place will disabuse you of them in two ticks of an enormous neck-clock.*
