Barter: Pork Shank Recipe



Pork Shank

Cook Time: 58 to 70 hours

For the Brine:

1 ½ quarts Coca-Cola
3 ½ quarts water
2 oranges cut in half
2 teaspoons cumin seed
2 teaspoons soriander seed
1 tablespoon cinnamon (or 1 cinnamon stick)
¾ cup kosher salt

For the Shank:

Brined Pork Shin 
2 cups Coca-Cola
3 oranges sliced

For the Brine:

1. Stir all ingredients until salt and sugar are dissolved. The recipe will season 8-10 shanks.

2. Brine shanks for up to 34 hours.

For the Shank:

1. Place the brined pork shank in a vacuum bag with 1/2 cup of Coca-Cola and 2 slices of orange.

2. Repeat this step for all the shins.

3. Seal the bag(s) and place in to a water bath at 68 degrees C for 24-36 hours depending on the size of the shank.

4. Once the shanks are done, rest the bags for 15 minutes then place them in to an ice bath and let cool in the refrigerator.

5. Heat oven to 500 degrees F.

6. Place the braised pork shank in a pan.

7. Place the pan in the oven. It will take about 10-15 minutes to warm through.

8. Check of the pork shank. It should have warmed through and have a nice golden brown outer layer.

9. Remove it from the oven and let it rest while you plate.
