Dump your bagel for a Cheddar Bay Biscuit breakfast sandwich

The breakfast sandwich is experiencing a bit of a renaissance right now. Increasingly, people are throwing out traditional bagels and croissants for loaves of hash browns or even grilled cheeses. The latest innovation to enter the fray is the Cheddar Bay Biscuit breakfast sandwich, an egg-and-bacon masterpiece that boasts a homemade version of Red Lobster's essential side dish.

Though the recipe comes from Simple Healthy Kitchen, you don't have to worry about vegan cheese or veggie bacon strips. This puppy has all the eggs, bacon, and cheddar-stuffed buttermilk biscuits you'd expect, just with reduced-fat Bisquick and extra greens mixed in. You'll obviously need to make a batch of biscuits first. Once they're all baked and sprinkled with parsley, you'll slice them in half and pile on spinach, avocado, bacon, tomato, a poached egg, and a splash of hot sauce, if you're so inclined.
