The bizarre ice cream sandwiches that could be in your freezer aisle soon

That bumper sticker that says, "Be the change you want to see in the world"? The guy making ice cream sandwiches for Denver-based Peteybird wanted to change… into bigger clothes by eating more, better ice cream sandwiches. His complaints about the ones he got in scoop shops and supermarkets were many: no flavor variety, artificial ingredients, and the fact that you'd have ice cream-covered hands when finished, like Lady Macbeth when she's got a sweet tooth.

He recently found so much success hawking his ideal ice cream sammies around Denver that he quit his day job. Now he's selling them in specialty grocery stores around Colorado, and we believe he's going to take over the world. Take in his handiwork:

Let's start off with his standby flavors. Up top there's a chocolate chip cookie with vanilla ice cream and underneath, a brownie cookie with salted caramel ice cream, which outsells every other flavor. Sure, they're delicious, but this isn't why he stands out.

The sandwiches you won't find anywhere else

This sucker's got strawberry-jalapeño ice cream that's "sweet on the front, but with a big back-end kick to it", and is sandwiched between two thick, delicious sea-salt sugar cookies.

In addition to the large sandwiches he sells in stores, you can catch Peteybird running around Denver hawking these bite-sized gems, like this mint-avocado ice cream with lemon zest cookies.

For some reason, this sugared carrot ice cream and ginger wasabi cookie sandwich failed to catch on. Perhaps because he didn't sell sushi with it. Another flash-in-the-plan sandwich that never quite made it was the pumpkin spice ice cream with maple-bacon cookies.

The graham cracker cookie and Key lime ice cream was a Denver favorite for about a year, but recently fell out of favor. Maybe if there's an online uproar, he'll bring it back.

Cool off with the refreshingly tasty lemon-basil ice cream and shortbread cookie pairing.

And he's got more amazing sandwiches debuting soon, including a chocolate-stout ice cream with cinnamon cookies. With Denver recently becoming a booming tourist destination, we predict his sandwich empire will only continue to grow.
