As anyone who's tried to order off-menu at TGI Fridays can tell you, fajita burgers sadly do not exist in the wild. But they can exist in your kitchen, if you follow this recipe for queso-smothered chicken fajita burgers. Confections of a Foodie Bride (you might remember her white sangria pops) put together these Tex-Mex wonders after wisely ditching her original plan for a fajita (gulp) salad. The burgers take all the most important parts of the skillet -- seasoned chicken, yellow onion, green bell peppers, queso, lime -- and scoop them onto a bun, making for a messy dinner that rivals Sloppy Joe Night. Except it's better than Sloppy Joe Night, because now you also have an excuse to serve margaritas.
