Ribs like you wouldn't believe
We just threw a huge New York Wine and Food Festival bash hosted by impossibly masculine celebrity chef Robert Irvine called Barbecue & the Blues. 16 NYC restaurants gave us their takes on BBQ, including Raymi Restaurant, who slayed the crowd with their Smoked Adobo Pork Ribs. Because we know you totally dominate your kitchen/kitchenette, we snagged the recipe for you
Ingredients
1 St. Louis cut pork ri
Smoked Adobo Rub:
- 1 ½ cups paprika
- 3/4 cup coriander
- 3/4 cup black peppercorns
- 1/2 cup cumin
- 10 bay leaves
- 3 cups brown sugar
- 1 cup salt
- 1/2 cup garlic powder
- 30 g ginger powder
- 1/4 cup dry chili powder
- 1/4 cup cinnamon
- 1/2 cup onion powder
Raymi BBQ:
- 350 g ketchup
- 50 g soy sauce
- 80 g Worcestershire Sauce
- 100 g molasses
- 225 g apple cider vinegar
- 6 g garlic powder
- 4 g celery salt
- 3 g smoked paprika
- 5 g black pepper
- 1 g cayenne pepper
- Salt to taste
1. Pre-heat oven to 225 degrees. 2. Rub ribs with adobo spice. 3. Set-up wood chips in a hotel pan lined with foil. 4. Burn wood until it starts smoking. Once it starts smoking, place pan in oven.5. Put the ribs in oven and roast for about 60-90mins.
