Fatty Crab's Zak Pelaccio heads upstate, you should probably follow
Taking his talents about an hour and a half north of the city to Hudson, Fatty 'Cue/Crab founding partner Zak Pelaccio is turning his attention towards the "New York regional palate" and nose to tail cooking with Fish & Game. Every day he'll be sourcing ingredients from the fields, streams, and farms around the rustic, farmhouse-y spot for dishes like flash-grilled pork with grilled scallion and preserved blood orange. Meanwhile, cocktails will utilize infusions created by an actual alchemist (she trained with Native Americans in the Midwest... suck it mixologists!) like the Where There's Smoke There's Fire with mezcal, chili-infused Aperol, fresh lime, and "a dusting of ground sumac from the property".
