Learn the inside-outs of the inside of a pig

Salt and Time -- farmer's market vendors who'll soon be opening a shop on E 7th St -- are now holding pork dressing & curing classes at their Niederwald, TX stronghold, aka the Fortress of Salumitude. The 4hr classes take place Saturday mornings (breakfast and lunch are included), and take you all the way from dismantling a half hog to setting into motion the year-long prosciutto-curing process.To give you an idea of whether you can stomach tearing apart pig stomach, click through to see photographs of the more gruesome half of the class -- it's pretty awesome, as long as you don't look while you're actually pigging out.
