A 2010 UT economics alum and a Houston culinary grad are filling the island-shaped void in Austin's sandwich scene with a late-night Trinity St trailer serving organic "People's Choices" like El Don (slow-roasted Eden Farms pulled pork, caramelized onion, cilantro, smoked chili aioli), De La Noche (local Berkshire ham, pulled pork, baby Swiss, pickles, pressed Cuban sweet bread), and, with shoestring potatoes, La Frita Cubana: a secret-sauced burger with ground beef and local Spanish chorizo -- while battling this Bay of Pig, be sure to provide your lungs air support.
