Operating out of a Greyhound bus converted into a diner instead of a place people have babies in country songs, El Chato was parked in southern Mexico since the '50s before turning an empty E 7th lot into a pleasant plaza in which to enjoy interior Mexican like Huevos Motuleños (sunny-side up eggs, black beans, salsa roja, queso fresco, chicharos, ham & plantains over a fried corn tortilla), verde or rojo mole tacos, and empanadas stuffed with everything from shrimp to cochinita pibil.
