Asti's Scorpion Pasta

Asti's newly appointed chef (who used to have pepper-eating contests with the dude from the Carillon) has created a garganelli pasta with w/ guanciale, tomato, a cooling lump of ricotta, spicy pickled jalapenos direct from a neighborhood garden, and what many call the world's hottest pepper: the Trinidad Scorpion, a compelling reason to get over here!!!
