BLT Sliders from Ya Ya's (Aaron Whitcomb): The hosts represent with housemade lamb bacon (said to have a "crispy, gamey, goat-cheesy taste") topping a patty with heirloom tomato/ mache leaves/ aioli, all of which is sandwiched inside a milk bun described as "really soft", so, like Pau Gasol... except there's meat in it, and it's good, so maybe more like Marc Gasol
Duck a L'Orange from The Village Cork (Samir Mohammad): Like Kiefer Sutherland, this duck becomes "really rich" over the course of 24hrs, where it's marinated in oranges/ Chinese five-spice mix/ duck gizzards before being stuffed with endives and topped with jicama & red peppers
Lamb Andouille from the late, great Encore on Colfax (Paul Reilly): CO lamb sausage is mesquite smoked, prepped andouille-style (basically, lots of cayenne & clove), and served over dirty rice seasoned with onion/ celery/ bell pepper, better known as "the Cajun Trinity", also a great school for kids that can't get into Cajun Yale
