People always talk about the power of "that twin thing", but what has it ever done for you? And also, that's not a very nice way to refer to Jenna Bush. Now a couple of twins have finally used their powers for your benefit, and created Salt Box Street Food.
Run by culinarian brothers who've worked for some of CO's best chefs (Kevin Taylor, Sean Kelly), Salt Box serves "artisanal comfort food" in a "fully functional mobile unit" built out of a GMC Step Van, also a sequel in which Wilder throws parties for those frats in Stomp The Yard. For international edibles, pick up a chicken schnitzel sandwich with lemon-caper tartar sauce and braised red cabbage, a banh mi made with mortadella, or a homemade bratwurst sammie with caramelized onions, Emmentaler, and Russian dressing, a treasonous condiment no one in the Greatest Generation would have ever eaten, even if they could have afforded salads. If you're looking for something more familiar, there's a short rib burger they grind themselves (w/ Dijon aioli and Gorgonzola or Tillamook), an English muffin grilled cheese with fontina/ arugula/ fig jam, and a mac 'n cheese spiced up with chipotle & bacon, and topped with breadcrumbs, which, given this dish's heaviness, will hopefully be the only trail you leave behind.
Meanwhile, sides run from hand-cut fries (with Parmesan/ truffle oil/ fresh herbs), to fried cheese, to mystery "tots", though if you're too scared to order them, you're totally Bush-league.
