Now the man behind Disco Bistro's ready to get Down...ton, as he kicks off a six-month St. Paul's Rising Sun residency that has him neatly dividing the pub between a comfort food-fueled downstairs bar, and a more refined, upstairs fine-diner. Upstairs: The space has been colourfully updated by a London artist/lighting designer, while the menu will see experimental fanciness like saddleback lardo w/ black treacle & buttermilk, a whole wood-charred wild sea trout w/ lime & lavender vinegar, some smoked bone marrow atop a 50-day-aged, highly ironic fillet of Dexter, and to finish, a heap of Cheddar & rye doughnuts w/ quince ketchup. Downstairs: Hit the bar for brasher "trash food". All test-driven at recent popups, this includes fried chicken wrapped in pigskin, his immensely popular lobster corn dogs, and a burger in a French-dipped bun, sopping it with beef juices and the belief that maybe, just maybe, this socialism thing can work.Drinkswise there's a healthy selection of cask ales, craft beers, and ciders across 12+ taps, while a new wine list upstairs will see a quattro of reds & whites, plus some English sparking wit. Or sparkling wine.
