Available to the end of the season, this menu of Spanish-style summer bellyfillers was designed by the Sam's part-owner, who's pairing his own line of wines with dishes incl. lamb kidneys sautéed in sherry, white almond gazpacho, and seared rainbow trout. Sweetness comes via crème Catalan (like brulee, but w/ cinnamon & orange) and fennel seed fritters w/ hot chocolate sauce -- after devouring that, you'd have to believe in miracles to think you'll still be a sexy thing.
