Grilled Cheese Month at the Foundry

As a build-up to the Grilled Cheese Invitational (where he's a shoo-in to win another award), Foundry chef Eric Greenspan's dropping deliciously gooey science on the regular this month, w/ this week's option being the Buffalo Blue (rye, blue cheese, chicken tender, red rooster) and next week's the Gruyere/ mustard aioli/ pickled cabbage/ ham/ pork belly/ pickle "Cuban Ruben", which either means it's Fidelicious, or that Studdard finally found a place to be popular.
