'Cause trends don't die, they just multiply! get a little weirder, GT's a rolling restaurant doling out what they call "Japanese Festival Cuisine", which apparently means savory deliciousness like chicken/plum teppanyaki, fried-lobster katsu, and griddle-cake okonomiyaki topped w/ your choice of tons of ingredients ranging from bacon and scallops, to provolone, bonito flakes, and pine nuts, also what you'd call an extremely specific subset of people who really get down on Arbor Day.
