The caliente newcomer's brought in world-class chef Jonathan Waxman to create a handful of limited-time "Flavors of Mexico" menus, starting with the Eclectic Cuts selection, which's inspired by the "art of butchery" and features meatiness like veal tongue tacos, braised pork cheeks, tamarind BBQ'd tri-tip, and enchiladas of lamb neck, meaning no one stuck theirs out for the poor little guy.
