Beecher's Handmade Cheese

Moving East from their Seattle homebase, this popular cheesery's new three-floor complex is outfitted with a ginormous, 8000gal steel milk tank, and'll be selling their famed curds (including the NY-only Flatiron, w/ a washed, soft red & gold rind), plus sandwiches, soups, and charcuterie. After haughtily watching the cheesemakers toil from the balcony, hit The Cellar for drinks and a shared-plate dinner of braised meats, roasted veggies, and their crab-ified "embellished mac", which kind of goes without saying, as nobody gets laid with honesty.
