Years-in-the-making in the wilds of McMinnville, Fino’s a brand-spankin’ salumeria serving a delicious selection of cured meats including fennel seed-/black pepper-seasoned finocchiona salami, and full-rolled pancetta redolent of juniper, clove, black pepper, and nutmeg, all made from free range, antibiotic-free hogs, who apparently weren’t raised in a pen-icillin.
