Chef'd by a Tibetan native, the Brave Horse-adjacent/heavily arted TM boasts an open kitchen slinging three styles of handmade dumplings: the soft steamed Tingmo (curried crimson eggplant w/ Walla Walla onion & curry paste), fried Samo-style numbers (the cumin/ coriander/ apricot Carlton Farms Pork), and the steamed Momo, which includes one made with star anise, cranberry, and Colorado yak, which is something all Boulder freshmen do the first time they go to The Sink after eating falafel from that place across the street.
