Shuffle on up to the feed trough of learning with this “Snout to Tail Cooking Class” from BLT Chef Victor Albisu, during which he'll demonstrate how to break down a whole cow one cut at a time, and then prepare an adventurous four-course lunch (which you get to eat at the end, obvi) including grilled beef heart with horseradish, and roasted sweetbreads, which unlike Charlie Sheen, could probably attract someone more famous than Anthony Jeselnik.
