(n.) A metal bar tool used to remove ice and solid ingredients from a mixed drink as it is poured into the serving glass. There are several types of strainers, but Hawthorne and julep strainers are the most popular. A Hawthorne strainer consists of a slotted disk and an affixed, coiled spring, which traps solids when placed over the shaker. A julep strainer has a curved perforated disk that resembles a large spoon, which can hold back solids against a glass while letting liquid flow freely.
