Housing the largest selection of absinthe in all the land, Sage's green-fairy-filled bottles range from standard-ish Le Tourment Vert to rarer stuff like St. George Vert and Spain's Obsello Verte, all of which they prepare in the traditional manner, with spoons, sugar cubes, and plenty of flames. The elegant joint's pimped with deep-stained wood flooring, chandeliers, and floor-to-ceiling wine towers, and plates gems like oxtail & marrow croquettes, and pork shoulder cannelloni w/ braised baby romaine & violet mustard, whose car-salesman father was totally freaking out when it was turning violet mustard, violet mustard.
